Ginger Grapefruit Breakfast Spread on Toast

Ingredients

Kickstart your morning with a zesty ginger grapefruit spread on toast, a perfect blend of sweet and tangy flavors.

  • 1/4 cup part-skim ricotta cheese*
  • 1/2 Florida Pink or Red Grapefruit, segmented and diced
  • 1 tablespoon finely chopped candied ginger
  • 1 tablespoon chopped walnuts
  • 2 slices whole grain bread, toasted
  • 2 teaspoons honey or 100% maple syrup

Instructions

  1. Combine ricotta, grapefruit, ginger and walnuts; spread on toast and top with honey.
  2. *Vegan: Mix 1/2 cup rolled oats with 1/2 cup soy milk or soy yogurt and let sit 15 minutes or overnight. Stir in grapefruit, ginger, walnuts and maple syrup.
