Ingredients
1- 1/3 cups Florida Orange Juice
2 tablespoons cornstarch
½ cup sugar
1 egg yolk
puff pastry, thawed
Preparation
Directions:
Preheat your oven to 400ºF.
In a small saucepan over high heat, combine Florida Orange Juice, cornstarch, sugar, and the egg yolk. Whisk until boiling, about 5 minutes.
Remove the curd from heat and let chill in an ice bath for 10-20 minutes. Wrap with plastic and chill until needed.
Trim the puff pastry into long triangles.
Spoon a small amount of curd at the base of each triangle, and roll towards the point, creating a crescent shape.
Place croissants on a baking sheet and bake until brown and puffy.
