Miso Pork Sausage Dumplings with Florida Orange Ponzu Sauce

Ingredients

For Florida Orange Ponzu Sauce:

  • ¼ cup Florida Orange Juice
  • ½ cup soy sauce
  • 2 tbsp. rice vinegar
  • 1 tbsp. lime juice
  • 1 tsp. sriracha

For Sausage Filling:

  • ¼ cup Florida Orange Juice
  • 2 tsp. Florida Orange zest
  • 3 lbs. ground pork
  • ¾ cup scallion, chopped
  • 6 oz. miso
  • 2 tbsp. ginger, grated
  • 1 tbsp. garlic, minced
  • 1 tbsp. sesame oil
  • 1 tsp. sriracha

For Assembly:

  • 24 gyoza or wonton wrappers
  • 1 egg, beaten
  • ¼ cup canola oil, divided
  • ¼ cup water

Instructions

  1. Place ingredients for Florida Orange Ponzu Sauce in a bowl. Mix thoroughly to combine and set aside.
  2. Place ingredients for Sausage Filling in a bowl. Mix thoroughly to combine.
  3. To assemble, place dumpling wrappers flat on a lightly floured surface. Place about 1 tablespoon of Sausage Filling in the center of each wrapper.
  4. Lightly brush the area around the filling with beaten egg. Fold the wrapper in half and press the edges between two fingers to seal. Place on a well-floured plate and cover with a damp towel.
  5. Heat 2 tablespoons of canola oil in a nonstick sauté pan over medium heat.
  6. Sauté half of the dumplings until light brown on both sides. Remove and sauté remaining dumplings in remaining 2 tablespoons of oil.
  7. Return all dumplings to the pan, carefully add ¼ cup water and cover tightly with lid. Cook until water evaporates, checking often so dumplings do not stick.
  8. Cut 1 dumpling in half to see if Sausage Filling is fully cooked. If dumplings are not fully cooked, add a few tablespoons water and continue cooking for several minutes or until done.
  9. Serve immediately with Florida Orange Ponzu Sauce.
