Pan-Seared Scallops with Chipotle-Florida Orange Juice Sauce

Looking for something to add variety to your dinner menu this week? Our Pan-Seared Scallops with Chipotle-Orange Sauce are a light dinner option packed with protein and nutrients from Florida Orange Juice.

Ingredients

  • ½ cup Florida Orange Juice
  • ¼ cup chopped green onions
  • 1 ½ lb. large sea scallops
  • 2 tbsp. butter, divided
  • ½ tsp. salt, divided
  • ½ tsp. paprika
  • Cooking spray
  • 1 tbsp. finely chopped canned chipotle chiles in adobo sauce

Instructions

  1. Melt 1 tablespoon of butter in a large skillet coated with cooking spray over medium-high heat.
    Step 1: Melt butter
  2. Sprinkle scallops with paprika and 1/8 teaspoon of salt.
    Step 2: Season scallops
  3. Add scallops to the pan; cook for 3 minutes on each side or until browned.

  4. Remove from the pan, and keep warm.
  5. Add Florida Orange Juice and chiles to the pan.
    Step 5: Add orange juice and chiles
  6. Bring to a boil, and cook until reduced to ¼ cup (about 1 minute).
  7. Add 1 tablespoon of butter and the remaining 1/8 teaspoon of salt, stirring with a whisk until smooth.
    Step 7: Whisk sauce
  8. Serve the sauce with scallops, and garnish with the green onions.
